Seasonal Tomato Sauce (for any pasta)

non-diary, gluten free
high in vitamin C, sulfur compounds
promotes bone health and heart health

4 cups seasonal local or organic chopped vegetables (broccoli, cauliflower, eggplant…)
1 organic onion, chopped
4 cloves organic garlic, minced
1 28 oz can fire roasted tomatoes
2 tbsp tomato paste
1 cup filtered water
optional garnish: fresh basil, ricotta cheese, extra virgin olive oil

1. In a large saucepan, combine all ingredients
2. Cover and simmer for 3 hours
3. Serve atop cooked pasta; garnish
