Pan Roasted Coconut Speckled Cauliflower (atop a bowl of grains)

non-diary, gluten free
high in vitamin C, vitamin K
fights inflammation, boosts learning and memory

2 tbsp organic coconut oil
1 head local or organic cauliflower; cut into bite sized florets
4 cloves organic garlic, minced
1 tbsp grated fresh organic ginger
1 tsp organic cumin seeds
½ tsp sea salt
½ tsp organic turmeric powder
1 cup frozen organic peas
Garnish with toasted shredded coconut; organic lime wedges

1. In a large skillet, over medium high heat, add all ingredients
2. Mix well
3. Cover and simmer for 20 minutes; stirring once
4. Serve atop cooked grains; garnish
